Roasted Carrot Cashew Dip

Hummus dips are a regular for afternoon tea at our house. Over the past couple weeks, I’ve been playing about with this recipe for Roasted Carrot and Cashew Dip. I like it for my kids as I love encouraging both veggies, and nuts and seeds in their diet. This is hummus style with no chickpeas….

Salmon and Zucchini Noodles

I’ve been exploring my KitchenAid Artisan Mixer a lot lately.  Up until now I have only ever used it as a cake mixer (Ssshhh!  I knoooow!  So bad!) but these beautiful machines are actually capable of so so much more than mixing and with a few handy attachments you can do away with loads of your other bulky and cluttered kitchen equipment!  The first attachment that I’ve added to my stash is the KitchenAid Spiralizer which I used to make this delicious and very easy Salmon and Zucchini Noodle dish.

The KitchenAid Spiralizer attachment comes with four different blades which peel, core and slice different widths and thicknesses.  To use, you simply unscrew the KitchenAid button at the front, insert the spiralizer and tighten.  Then simply pop in your desired blade and you’re all set.

The first dish I made using the spiralizer was zucchini noodles.  I’ve been seeing them everywhere lately and wanted to see what all the hype was about.  I love zucchinis and was interested to see if they would make a good, healthier substitute for pasta noodles.

The actual process of making the zucchini noodles with the KitchenAid Spiralizer is a lot of fun and almost a bit addictive.  It’s fascinating to watch all these perfect, curly noodles come dropping down in to the bowl.  My girls loved helping too so it’s a great way to get kids involved in the kitchen.

I didn’t follow a recipe for my zucchini noodles.  I just followed my instincts and the added the flavours I know and love.  In just a little more time than it would take to make a sandwich, I created the most amazing lunch for one.  It was absolutely delicious.  And I can definitely say that I am a zucchini noodle convert.  They are deliciously tasty, healthy and filling.  So good!

Ingredients
2-3 zucchini (per person), spiralized
2 tablespoons avocado oil (or similar)
2 cloves garlic, crushed
A pinch of ground chili (optional)
Basil pesto
Cherry tomatoes
Parmesan
Fresh cracked pepper

Heat oil in a large pan.
Add garlic and chili (if using) and sauté for one minute until fragrant.
Add zucchini noodles and cook until soft (firm but not soggy).  Approx 8 minutes.
Remove from heat and stir through basil pesto and cherry tomatoes.
Plate in a shallow bowl and sprinkle with parmesan cheese.
Layer with flaked Regal Salmon.
Top with fresh cracked pepper.

Enjoy x

Seeing the World through Tom’s eyes….

One of the main motivations to getting a qualification was that I wanted to find a place where I worked in a team. I wanted to be a small piece of something bigger, not the person in charge (I’ve done that, it sucked). I’ve been working at Big Boy Webs… Continue reading

Easter Basket Fillers

Each year our Easter weekend coincides with the start of our school holidays.  As well as a little chocolate treat from the Easter Bunny, I like to give our girls a small basket of goodies to kick off the holidays.  Most of the items are practical things they actually needed anyway given under the guise of “Easter gifts” – winter sleepwear, socks and gumboots, with a couple of inexpensive treats thrown in as well.  Here are some of the cute things I came across which would make great gifts this Easter.

Dressing Gowns

Autumn Nighties
Cam Cam Swan Nightie from Little Bambinos and Bunny Yardage Nightie from Seed Heritage

Slippers and Bed Socks

Gumboots

Books

Craft

Easter Bunny Toys

Novelty Basket Fillers

Num Noms, Twozies and Shopkins Blind Boxes.  All available from The Warehouse.

And in case it’s looking like a wet long weekend, a little Lego set never goes astray… Duplo Minnie Mouse Café from Mighty Ape and Lego Friends Heartlake Gift Delivery from Toy Co

And to pop their Easter treats in…

*Zulily is like a one-day-deal website in America that I buy a lot of the girls clothes and toys from.  I’ll share all about it in another blog post but message me if you have any questions.

The best internet filter

For years I have been recommending that parents put some type of internet filtering software on their computers and devices to protect their children from nasty stuff on the internet. It makes sense, doesn’t it? If they cannot view the rotten stuff, it cannot do them any harm. It makes perfect sense – but software […]

What Lifting Has Taught Me

The majority of my life I have battled with my brain to becoming skinnier, until the last few years I had never pushed to become stronger. The number on the scale was still seen as the ultimate goal.
Lifting has taught me a number of things and now I have more NSG (non scale goals) than scale goals

*  It’s taught me to not be so hard on myself

*  I’ve developed a deeper respect for how powerful, awe-inspiring, and enduring my female body truly is

*  On days when I’m unsure of myself, I remember how much stronger I am than my emotions

* Lifting taught me how to focus on my goals, visualize them, and then absolutely crush them

*  It’s taught me that I am a smart woman. I am a strong woman. I am a beautiful woman

Last week I finally reached a goal of dead lifting my body weight – I had been joking with my trainer if only I weighed less I would’ve achieved this goal a heck of a lot sooner …

Parents, find your village

Diane Levy taught me to be a boring mother. For that, I will always be grateful. When one of my children was going through a slightly clingy stage, I read Diane’s book Of Course I Love You, Now Go to Your Room. In the book she talks about the ‘boring cuddle’. We’d arrive at a […]
