Salmon and Zucchini Noodles

I’ve been exploring my KitchenAid Artisan Mixer a lot lately.  Up until now I have only ever used it as a cake mixer (Ssshhh!  I knoooow!  So bad!) but these beautiful machines are actually capable of so so much more than mixing and with a few handy attachments you can do away with loads of your other bulky and cluttered kitchen equipment!  The first attachment that I’ve added to my stash is the KitchenAid Spiralizer which I used to make this delicious and very easy Salmon and Zucchini Noodle dish.

 
The KitchenAid Spiralizer attachment comes with four different blades which peel, core and slice different widths and thicknesses.  To use, you simply unscrew the KitchenAid button at the front, insert the spiralizer and tighten.  Then simply pop in your desired blade and you’re all set.
 
The first dish I made using the spiralizer was zucchini noodles.  I’ve been seeing them everywhere lately and wanted to see what all the hype was about.  I love zucchinis and was interested to see if they would make a good, healthier substitute for pasta noodles.
 
The actual process of making the zucchini noodles with the KitchenAid Spiralizer is a lot of fun and almost a bit addictive.  It’s fascinating to watch all these perfect, curly noodles come dropping down in to the bowl.  My girls loved helping too so it’s a great way to get kids involved in the kitchen.
 
 
I didn’t follow a recipe for my zucchini noodles.  I just followed my instincts and the added the flavours I know and love.  In just a little more time than it would take to make a sandwich, I created the most amazing lunch for one.  It was absolutely delicious.  And I can definitely say that I am a zucchini noodle convert.  They are deliciously tasty, healthy and filling.  So good!
 
 
Ingredients
2-3 zucchini (per person), spiralized
2 tablespoons avocado oil (or similar)
2 cloves garlic, crushed
A pinch of ground chili (optional)
Basil pesto
Cherry tomatoes
Parmesan
Fresh cracked pepper
 
Heat oil in a large pan.
Add garlic and chili (if using) and sauté for one minute until fragrant.
Add zucchini noodles and cook until soft (firm but not soggy).  Approx 8 minutes.
Remove from heat and stir through basil pesto and cherry tomatoes.
Plate in a shallow bowl and sprinkle with parmesan cheese.
Layer with flaked Regal Salmon.
Top with fresh cracked pepper.
