All mums and dads need a repertoire of tasty quick meals that can be put together quickly and easily. But finding time and being organised enough to make food for your family can be challenging at times. Often it’s even hard to find the dining table in our house… it’s usually covered in lego, bills, colouring in and (clean) laundry.

The new We Are What We Eat campaign is a great reminder though that making meals at home and eating together can be some of the simplest pleasures in life. Sometimes we just need a bit of inspiration. We Are What We Eat’s mission is to offer you a good old helping of that.

 

My Quick Dinner Fixes

With a family of three little boys to feed, finding something they all will eat is sometimes tricky. Our two current favourite family meals are home-made pizzas, and meatballs in tomato sauce, served with either rice or pasta.

A pizza can be as simple as a grilled pita bread with tomato paste and cheese on top. Or you could start with a traditional home-made dough. It is so simple to make home-made pizza dough, and most bread-makers come with their own recipe. Or you could try Annabel Langbein’s two ingredient which you can find on their youtube channel. I just made this today. I cant believe how easy it was.

Once your base is sorted, then all you have to do is add a bit of things you like and you have a great easy dinner. And pizza is a really easy way to feed a crowd, and you can easily accommodate food preferences (and anti-preferences) by making mini pizzas. If your guests of family are really fussy, why not let them make their own… And leftovers are an easy lunchbox filler.

Meatballs are one of the most popular meals in our household. I love them, because my boys ALL eat them. My husband loves them too, and I can eat lots of vegetables smothered in tomato-meaty sauce. An allround winner in my books.

Served with rice you can even make meatballs a gluten free meal. Or try lamb and bulgur meatballs  with a smoky eggplant and tomato sauce for a different flavour and style.
